Breakfast Quiche
This is a really good quiche to serve at brunch or even for
dinner.
1/2 cup green pepper, chopped
1/2 cup onion, chopped
8oz. package chopped spinach, thawed
8oz. fresh mushrooms, sliced
1/2 pound bacon or ham, cooked and chopped
6 eggs
1 cup half & half cream
1/2 cup cheddar cheese
1/2 cup mozzarella cheese
1 teaspoon salt
1 teaspoon pepper
1 pie shell
1. Sauté green pepper, onion and mushrooms until tender.
2. Bake pie shell at 400 degrees for 5 minutes.
3. Break eggs and mix in bowl.
4. Stir in half & half, salt, and pepper.
5. Add remaining ingredients and mix thoroughly.
6. Pour mixture into pie shell.
7. Place pie shell on baking sheet to prevent spilling.
8. Bake at 350 degrees for about 45 minutes or until tester comes
out clean.
9. Let sit for 5 minutes before serving.
