Cheater's Chocolate Italian Cream Cake

 

I call this a "cheater's" cake because there are lots of shortcuts taken to make it.  Your mouth will never know that you cheated and your friends won't either!

 

Cake

1 box chocolate cake mix (or devil's food, depending on what you prefer).

2 stick of cooled melted butter

4 large eggs

1 cup shredded coconut

1 cup chopped pecans

1 cup buttermilk (if you don’t have butter milk use regular milk and stir a tablespoon of vinegar into it before adding it to mix)

 

1. Combine cake mix, buttermilk and butter.

2. Beat eggs and add to mixture.  Mix until all lumps are gone.

3. Add coconut and pecans. Stir well.

4. Bake according to box directions and cake tester comes out clean.

 

Frosting

1 8oz package of cream cheese

2 sticks of butter

1 teaspoon vanilla

1 box powdered sugar

3 tablespoon(s) cocoa

 

1. Combine all ingredients.

2. Frost onto cooled cake.

 

Variations: 

Use a banana cake mix and omit cocoa from frosting. Add 1/3-cup peanut butter to frosting.

Use white cake mix and omit cocoa from frosting (like a traditional Italian Cream Cake).
