Earthquake Cake

I got this recipe from my cousin Heather.  This is still a favorite of mine.  Make one for your office and everyone will go nuts!  It looks like a complicated cake to make, but it's actually super easy. Some say it resembles an upside-down German Chocolate Cake.

1 cup coconut

1 cup chopped pecans

1 box German chocolate cake mix

1 tespoon vanilla

1 stick butter

8oz. cream cheese

1 box (pound) powdered sugar

1. Cover the bottom of a greased 9 X 13 baking dish with coconut and pecans.

2. Prepare cake mix according to directions on the box (you may need eggs and vegetable oil for the mix).

3. Pour cake batter over coconut and pecans.

4. Melt butter in microwave.

5. Add to cream cheese, powdered sugar and vanilla.  Beat until smooth.

6. Dollop mixture over cake batter.

7. Bake at 350 degrees for 45 to 50 minutes or until tester comes out clean.

8. Cool for 10 minutes and then dump onto a cake board.  You can also serve it from the baking dish.
