Judy's Chocolate Cake

 

This is one of my favorite chocolate cakes.  It's rich as can be, but who cares!  Mom's friend Judy used to make this when I was a kid and I still love it.  People call this cake by different names, but I always remember it as Judy's Chocolate Cake!

 

1. Bring to a boil (to make a sauce)

2 sticks of butter

1 cup water

3 tablespoon(s) cocoa

 

2. Combine in a large bowl

2 cups of flour

2 cups of sugar

1/2 teaspoon(s) cinnamon

1 teaspoon(s) baking soda

 

3. Add sauce and mix thoroughly.

4. Add 2 eggs

1/2 cup buttermilk

1 teaspoon(s) vanilla

5. Pour in 13 X 9 greased and floured pan

6. Bake 20 minutes at 350 degrees until cake tester comes out clean.

 

Frosting

 

1. Simmer

1 stick butter

3 tablespoon(s) cocoa

1/3 cup milk

2. Remove from heat and add

1 teaspoon(s) vanilla

1 box (1 pound) powdered sugar

1 cup chopped pecans (or more if you love pecans as much as I do!)

 

3. Frost cake while it's still hot from the oven.  

 

I like to serve this cake cold from the fridge, but room temperature is nice too.
