Tortilla Soup

 

This was a favorite of my grandmother Meme.  She always asked me to make it when she visited.  My sister Kendra loves it as well.  This is a tomato-based version that contains no meat. 

 

12 cups of water

8 chicken bouillon cubes

1 6oz can of tomato paste

28 oz can of chopped tomatoes

1 medium onion chopped

1 bell pepper chopped

1/2 teaspoon(s) ground black pepper

2 tablespoon(s) cumin

2 tablespoon(s) chili powder

1/2 tablespoon(s) garlic powder

1 1/2 teaspoon(s) salt

1 30 oz can white hominy (drained)

1 bag tortilla chips

Grated Monterey Jack cheese for garnish

 

1. In a large pot, bring water to boil and add bouillon cubes until dissolved.

2. Add tomato paste, chopped tomatoes, onion, bell pepper, black pepper, cumin, chili powder, garlic and salt.  Lower heat to medium.

3. Once the mixture begins to simmer and boil slightly, add hominy and lower heat to medium low.  Cover and cook for 10 minutes.

4. Serve in bowls and garnish with tortilla chips and Monterey Jack cheese.
