Cameron's Cream Queso

 

I got this recipe from my friend Tim.  I've never made it myself because Tim always makes it for parties and such.  Nevertheless it is WONDERFUL!!

 

1 onion, diced

1 green bell pepper, diced

1 yellow bell pepper, diced

1 red bell pepper, diced

1 pound mild pan sausage

3 8oz. packages of cream cheese, softened

2 cans diced Rotel tomatoes, one drained

1 8oz. container sour cream

2 to 3 tablespoons fresh, chopped cilantro

2 to 3 tablespoons cumin

2 to 3 tablespoons chili powder

a dash of cayenne pepper (optional)

 

1. Sauté onions and peppers until tender and place in a tree quart saucepan with Rotel tomatoes, cilantro and spices.

2. Brown sausage and drain well.

3. Slowly warm Rotel/vegetable mixture while gradually adding cream cheese until well blended.

4. Stir in crumbled sausage.

5. Continue stirring, adding more spices (to taste)

6. Remove from heat, allowing mixture to cool.

7. Fold in sour cream, mixing well.

 

Makes approximately three quarts.

 

Serve warm as a queso dip, or cold as a spread for crackers.
